What we eat is a decisive factor in whether we grow old in good health. This is because food components enter our blood and influence our vascular system. The vascular system supplies every corner of the human body. Whether the heart and brain, kidneys and skin, eyes and feet are well supplied with oxygen and nutrients depends on our arteries and veins - and on what we eat. For this guide, a team led by Professor Eike Sebastian Debus took a close look at studies published worldwide on the connection between diet and healthy blood vessels. On this basis, the experts have drawn up dietary recommendations. Michelin-starred chef Gilbert Köcher has used these to create recipes that turn healthy eating into a celebration.
